So, for those of you who don’t know me, I love to cook. Well, I love to bake, really. And I also really love nutrition and fitness…a few months ago, my husband and I took on the challenge of changing to a Paleo diet. “Diet” isn’t the correct word…”lifestyle” is better. We are really enjoying Paleo. It feels great to be eating so clean and healthy! It is fun finding new recipes to try! My friend Sarah gave me The Paleo Effect cookbook by Meghan Little and Angel Ayala Torres for Christmas…all the recipes look amazing!
If you live in Fort Myers, maybe you’ve heard of the breakfast restaurant Crave? If you haven’t, you have to go there! One of the best breakfast places in town! One thing that makes them so amazing, is there ginormous delicious blueberry pancakes! Gone are my pancake days at Crave (although we love to go there for their equally amazing omelets!) since eliminating wheat about 6 months ago and now doing Paleo.
This morning, I made the Paleo Pancakes from The Paleo Effect Cookbook and added frozen wild blueberries. If there was ever a Paleo pancake that I would even dare to compare to the goodness of the Crave blueberry pancake, it is this one. Melt in your mouth, fluffy, and sweet – there is even maple syrup in the batter! I doubled the recipe to be sure to have enough to put in the freezer for another day!! (recipe below)
2 large eggs
1/3 cup Maple Syrup
1 Tbsp Vanilla Extract
1/4 cup water
2 Tbsp Coconut Oil
1/2 tsp Sea Salt
1/4 cup Golden Flaxseed Meal
1 1/4 cups Almond Flour
1/2 tsp Baking Powder
1 Tbsp Arrowroot Powder
extra Coconut oil for the skillet
Combine all the ingredients. Heat a skillet over medium-low, add coconut oil to the skillet, and pour batter into small pancake sizes so they are easier to flip. If you’d like (and i highly recommend it) add either fresh or frozen wild blueberries to the pancakes before flipping! Top with butter or fresh fruit or even more maple syrup…eat and enjoy!!!
